Why would the timestamp of an install event come before the user’s date first seen?

The timestamp for an install event is the actual installation time from system-level metadata, not the timestamp the user first opens the app and Heap starts tracking events. For example, if a user installs on Monday and first opens the app the following Tuesday, the install date will be Monday and the user’s date first seen will be Tuesday.
